Monday Meal Plan

So, in an attempt to keep my life a tad more organized, I'm going to try something new for a few Mondays. Please don't skip Feel free to skip the next few Mondays, or read over my lists and get some inspirations. If you want any recipes, just ask me and I'll try to post them. (Also, I'll be posting my amazing Stuffed Squash recipe later this afternoon!)

chicken-fried steak, squash fritters, and fruit salad

chicken tacos with corn and salad

leftovers/clean out the fridge

oven brisket (mmmmm ...) with mashed potatoes and salad

swiss chard over penne pasta

Sunday, June 8
chopped beef sandwiches and fresh green (and purple- and black-hulled) beans

I'M USUALLY ALWAYS TRYING TO WATCH MY DIET (WHICH DOESN'T EVER PAY OFF IN MY OPINION...) AND IT'S USUALLY ONLY ME AND THE BABY ALL DAY. SO, IT'S REGULAR OL' SPAGHETTIO'S, PEANUT BUTTER HONEY SANDWICHES, LUNCHABLES, AND OTHER THINGS LIKE THAT ON OUR MENU. I HAVE SO MANY AMAZING RECIPES THAT I NEVER GET TO MAKE, BECAUSE THERE'S NOBODY HERE TO EAT IT ALL! HOPE YOU'RE DOING WELL! :)

I keep trying to email you but it keeps rejecting my emails. Crap. Anyway, I was emailing to tell you that I am now officially using Beulah Faye as the next pseudonym when I need one for a female. haha. That is so classic.

we grilled some chicken tonight that i had marinading in a home-made jerk sauce. i'll send it to you. it wasn't too spicy, i'd probably kick it up a bit more next time. and then an old stand-by for us is pork tenderloin marinated in terriaki. yum. we usually make our own sauce. and i usually make enough to last us two nights. so tomorrow night is jerk chicken again and then wed/thurs will be tenderloin.

I'm not sure what we're having tonight. Last night we had King Ranch Casserole, which I had just cooked for the first time. My son (your little [big to you] brother) was so sweet as had tried so hard to ingest this mass of soupy, soggy tortillas with millions of 'lil rotel tomatoes floating all over the plate, with a smile. Maybe tonight I'll just fix sompin up that Beulah Faye taught me how to cook...say...chicken fried chicken, purple hull peas (cuz they're in my garden uh huh!), taters, home made biscuits and gravy. Maybe some sweet tea to boot. Wow...I sound country. =)

Can i come eat with you all week? So far this week, I've had Sonic for dinner. No idea what i'm going to have tonight, or any other night this week for that matter.

Since we have 7 kids so cheap foods are best (and I am of Mexican descent) we eat a lot of beans and rice.

I have been trying to pin down a good tortilla recipe. I remember making tortillas with my grandmother when I was a little girl, but she has passed so I can't ask her and my mom is not much help.

Tonight we ate my "Goulash." It's simple, which is perfect since I'd rather be pulling weeds (for as long as possible) outside in the late of day than inside making dinner!

My goulash is just white rice mixed with green beans that have been cooked with ground turkey and liberally spiced with garlic salt, onion powder, salt and pepper.

I also usually make us spaghetti several times a week. I use cans of tomato sauce and whole tomatoes with basil, garlic salt, onion powder, pepper, salt, oregano, & Italian seasoning.

My special ingredient is spinach. I add spinach to the sauce because iron is more easily digested with vitamin C (which tomatoes are full of.) It is so nice going out to the garden and cutting fresh spinach to add to our dinner! (Unfortunately I haven't planted Basil yet!)

I can tell you how to make Spanish rice. I cook this when we have pinto beans.

Put some oil in a pan. Just enough to coat the bottom of the pan and moisten 2 1/2 cups rice. Then I let the rice brown. I add onions and bell pepper if I have on hand. Also begin to spice it. (garlic salt, onion powder, pepper, salt, season salt and a little chili powder.)

I stir occasionally to brown all the rice. Should take about 10 minutes. Then I add 4 1/2 cups water and 1/2 cup tomato sauce. Stir to mix and also add diced tomatoes if fresh or cut whole canned tomatoes.

cook just like any rice from here. (At some point before rice is completely finished I taste and then spice to taste.)

When I make black beans I do all of the above EXCEPT I don't add tomato sauce, I use only water.
